Eggs was my favorite breakfast food before I went vegan, I could easily eat a big plate of 4 to 5 scrambled eggs with toasted bread. After I started doing vegan, I couldn’t eat real eggs but the craving of it still existed strongly. I discovered I can make tofu into scrambled eggs by crumbling it, below this post is my recipe of how to make tofu scrambled eggs. So does it taste like scrambled eggs? I’d say the smell, flavors and textures of the crumbled tofu can get rather similar to scrambled eggs, but you’re not gonna fool anyone into thinking they’re real scrambled eggs any time. It tastes good though and that’s what really matters for me as far as vegan food goes, a lot of people love tofu scramble and I hope you do too.
Which Kind of Tofu to Use?
There are a huge variety of tofu to choose from, which one is best to use for making tofu scramble? The answer is it depends on how you like your eggs. Runny? Medium done? Well done and firm?
Use soft tofu if you like your “eggs” soft and runny, and use extra firm tofu if you like it hard and rubbery like I do. I always like my eggs super well done, as I get very paranoid about salmonella with runny eggs. But since we’re talking about tofu “eggs” here, salmonella is not at risk and so I have no negative bias towards runny tofu.
Why is Turmeric Important?
Turmeric is a spice from the ginger family originating from southern Asia, it has numerous anti-inflammatory and healing properties. People in India have used it for many thousands of years as a spice and as a medicinal herb. It is the main spice used in curry and gives it that yellow color. This yellow color can be used in tofu scramble to make the tofu look like scrambled eggs. It doesn’t carry much flavor by itself, so it’s usually just used to add color to foods.
A little goes a long way, about a tsp of turmeric is more than enough to transform your white tofu scramble into a deep golden yellow color. Be careful to not add too much as that will start to make it taste bitter. If you want whiter tofu scramble because you’re used to eating scrambled egg whites, then add less turmeric.
Do You Like Cheese with Ur Eggs?
Some people like adding cheese with their eggs, and luckily the vegan cheese market today is loaded with plenty of options. To reduce the fat content you can add in nutritional yeast instead, which is a popular cheese substitute due to it’s flavor which is often described as cheesy and nutty. Nutritional yeast can also be used on things you’d normally use cheese for, such as baked potatoes and popcorn.
Scrambled eggs is generally a western breakfast dish, but many ethnic ingredients and flavors can be added to it to give it a more multicultural flare. For example, you can make it Asian by adding in ingredients such as chili peppers, five spice powder, green onions, and chopped up Chinese broccoli. Or make it Italian with some red onions, artichokes, olives, garlic and basil.

One of my favorite vegan breakfast recipes. I like to eat tofu scramble with a few slices of toast with vegan butter or jam, and some fried up potato hash browns.

What You’ll Need…
- 1 package of firm or extra firm tofu
- 1 small onion chopped and diced
- 1 clove of minced garlic
- 1 tbsp of garlic powder
- 1tsp of turmeric (gives it a nice yellow color)
- (Optional) 1 chopped up Tofurky sausage or any vegan sausage substitute
- 1 tsp of salt
- a sprinkle of black pepper
- 1/4 cup of water
Putting It All Together
- Drain the water from the block of tofu and put it into a large bowl
- Crumble the tofu with your hands
- Put some vegetable oil in a pan and heat it up over medium heat
- Put in the onions and garlic, saute them until they’re translucent
- Add in the crumbled tofu and sausages
- Add in the garlic powder, turmeric, salt and pepper
- Add in the water
- Cook for 3 minutes, stir it around often to make sure it doesn’t burn
Note: Adding in the water will help all the spices blend evenly and absorb into the tofu.
Sides With Your Tofu Scramble
A breakfast of tofu scramble is never complete without it’s awesome side dishes. Don’t forget to toast up some bread and spread it with a generous amount of vegan butter. Serve it up some fried up potato hash browns and vegan bacon or sausage. Cut up a few slices of tomatoes and garnish on the dish. The breakfast is ready to be devoured…
